Oatmeal Cake
1 1/4 cups water
1 stick butter
1 cup Quick rolled oats
Bring water and butter to a boil then stir in Quick rolled oats. Remove from heat and set aside.
1 cup sugar
1 cup brown sugar
1 1/2 cups flour
1 tsp baking soda
1 tsp cinnamon
2 eggs
1 tsp vanilla
Combine ingredients then add the above rolled oats mixture. Stir all together with a spoon then pour into a greased 13×9 pan.
Bake cake at 350° for 30 minutes or until toothpick comes out clean when testing.
Topping:
1 stick butter, melted in microwave
1 cup brown sugar
3 tablespoons canned evaporated milk
1 1/2 cups sweetened coconut flakes
½ tsp vanilla
Stir all together and spread on top of the cake as soon as it comes out of the oven.
Turn oven broiler to high, then place cake under broiler to brown the topping. Turn pan as necessary (2-3 minutes). NOTE: Watch closely when broiling as topping can burn easily.
