Ingredients
1 lb Chicken tenders
1/2 cup Flour
1 Egg + 2 teaspoons soy sauce
1 1/2 cups Panko breadcrumbs
Salt
Pepper
3-4 tablespoons Oil (I used coconut)
For the Sauce…
1/3 cup Honey
1/3 cup Soy sauce
1 tablespoon Rice vinegar
1 tablespoon Fresh ginger, peeled and finely chopped
1 tablespoon Fresh garlic, finely chopped
Red pepper flakes to taste
Instructions
Place the flour, egg plus two teaspoons soy sauce, and panko in three separate shallow bowls. Whisk egg mixture to combine soy.
Season the flour with salt and pepper.
Meanwhile, place a large sauté over medium heat, with 3 to 4 tablespoons of oil. Pat the chicken tenders dry then dredge in the flour, then egg mixture, then panko. Pan sauté chicken in oil, 3-4 minutes per side or until cooked through. Set aside.
In a separate bowl, mix all ingredients for the sauce together except for the garlic. Add garlic to the hot pan with oil and cook for 30 seconds. Add the rest of the sauce ingredients to the pan and simmer for 1 minute. Place the chicken in the pan and turn to coat. Serve immediately. Served with rice and veggies.
