Ingredients: (amounts are to taste)
Black eye peas
Tomatoes
Bell peppers and mini peppers
Yellow Onion
Green Onions
Oil
1 boullion cube
Fufu n sauce curry
Salt as needed
Method:
Boil black eyed peas in water, removing and draining 1-2 minutes under package directions.
Meanwhile in a large stockpot or skillet, add oil and sauté all of the diced peppers and onions. Add diced fresh tomatoes and cook 2-4 minutes more. Add bouillon cube and the curry powder (available at fufunsauce.com ) along with the beans. Simmer until everything is combined, salt as needed, and serve. Enjoy!
