Bang Bang Salmon Bowls

Ingredients:


4 Salmon filets, about 4 ounces each

1/2 cup Mayonnaise

1-2 tablespoons Sriracha

1/2 -1 teaspoon Soy sauce

4-6 cups Steamed rice

2-3 cups Steamed broccoli florets

Yum yum sauce (optional)

Kewpie Mayo (optional)

Toasted sesame seeds (optional)


Instructions:


Preheat oven to 400°F


Cut raw salmon fillets into 1 inch chunks. Combine mayo, sriracha, and soy sauce, adjusting amounts to taste. Coat salmon in the sauce then place chunks, in an even layer, on a baking rack placed over a sheet pan. Bake salmon for 8-12 minutes, or until golden and salmon flakes.


Serve salmon in bowls over steamed rice and broccoli. Top optionally with a drizzle of yum yum sauce or Kewpie mayo, and a sprinkle of toasted sesame seeds. Enjoy!
