On Episode 081, Chef Alekka suggests that a fruit crumble is the perfect dessert for a beginner baker. Excellent during the chillier months of the year. Here is Doug’s recipe for Apple Streusel Skillet, an apple crumble done in a cast-iron skillet.
Ingredients:
For the streusel topping…
3/4 cup Flour
1/4 cup Old-fashioned Oats (optional)
1/2 cup Brown sugar, lightly packed
1/4 cup Sugar
1 teaspoon Cinnamon
1/2 teaspoon Ground Cardamom
1/4 teaspoon Salt
8 tablespoons Butter, cold and diced
For the skillet apples…(10 inch cast iron skillet)
2 tablespoons Butter
5-6 Fuji or Cosmic Crisp apples, peeled and sliced
2 tablespoons Brown sugar
2 tablespoons Cornstarch
1 teaspoon Vanilla
2 tablespoons Fresh lemon juice
1/4 teaspoon Salt
Method:
Preheat oven to 350°F
For the topping, add all streusel ingredients into a large mixing bowl, except for the butter. Whisk to combine. Add the butter and flake through, either with your finger tips or a pastry cutter, until course meal is formed. Place bowl in the refrigerator until ready to use.
Place a cast-iron skillet over medium heat, along with 2 tablespoons of butter. Once the butter is melted at the apples sautéing for 2-3 minutes. Off heat, add the remaining skillet app ingredients and stir.
Sprinkle the streusel topping evenly over the Apple mixture. Place in the oven and bake a 350°F for 35 to 40 minutes. Apples will be soft and the topping will be a medium brown color.
Allow the apple streusel skillet to cool for 10 to 20 minutes before serving. Serve with whipped cream, crème fraîche, or ice cream.
