Beef Tallow French Fries

Recipe inspired by guest, Dagny Como

2-3 lbs Potatoes, such as Yukon gold or russet potatoes, scrubbed clean

4 cups Beef tallow

Salt

Optional topping:

Parmesan cheese

Rosemary

Thyme


Cut potatoes into desired french fries shapes, and note that thickness will affect cooking time. Soak uncooked fries in cold water for 10-15 minutes to remove excess starch. Drain, rinse, and pat dry.


Meanwhile, heat the beef tallow to 375°F.  Cooked potatoes in batches (keeping the oil around 350°F) until golden brown.


Place cooked french fries on a cooling rack set over a sheet pan, or a paper towel lined plate. Salt immediately, and add additional toppings such as Parmesan cheese or fresh chopped rosemary and thyme. Enjoy!
